Eski Adigeler, \u00e7ok eski \u00e7a\u011flardan beri, hayvan ve et \u00fcr\u00fcnlerinin, bu\u011fday ile de\u011fil, akdar\u0131 (\u0444\u044b\u0433\u0443) ile daha uyu\u015ftu\u011funu ve dama\u011fa daha bir tat\/lezzet katt\u0131\u011f\u0131n\u0131n bilincine eri\u015fmi\u015flerdi.<\/p>\n<p>M\u0131s\u0131r bitkisi, XVII. y\u00fczy\u0131lda Kafkasya\u2019da yeti\u015ftirilmeye ba\u015fland\u0131. M\u0131s\u0131r, giderek di\u011fer tah\u0131l (\u0433\u044a\u0430\u0436\u044a\u043e) \u00fcr\u00fcnlerinin yerini ald\u0131 ve bir besin maddesi olarak \u00f6n plana \u00e7\u0131kt\u0131. B\u00f6ylece ekme\u011fin sabahlar\u0131, akdar\u0131 ya da m\u0131s\u0131r ka\u00e7ama\u011f\u0131n\u0131n (\u043f1\u0430\u0441\u0442\u044d) \u00f6\u011fleyin ve ak\u015famlar\u0131 et ve hayvan \u00fcr\u00fcnleri ile birlikte yenmesi bir gelenek\/al\u0131\u015fkanl\u0131k haline geldi.<\/p>\n<p>Eski Adigelerin eri\u015fmi\u015f olduklar\u0131 sanat anlay\u0131\u015f\u0131 ile bilin\u00e7 d\u00fczeyini de belirtmemiz gerekir. G\u00fcn\u00fcm\u00fczde biyokimya bilimi taraf\u0131ndan da do\u011fruland\u0131\u011f\u0131 gibi, bile\u015fimleri gere\u011fi, akdar\u0131 ya da m\u0131s\u0131r\u0131n, et ve hayvan \u00fcr\u00fcnleri ile birlikte t\u00fcketilmesi, insan sa\u011fl\u0131\u011f\u0131 ve bedensel geli\u015fim a\u00e7\u0131s\u0131ndan, bu\u011fday ve di\u011fer tah\u0131l maddelerinden \u00fcretilen yiyeceklere oranla, \u00e7ok daha uygun ve yararl\u0131d\u0131r.<\/p>\n<p>Adige yemek\/sofra gelene\u011finin izledi\u011fi tarihsel yolculu\u011fa de\u011finecek olursak, en belirgin olan \u015fey, ulusun elinden gelen ve \u00fcretmekte oldu\u011fu tah\u0131l (\u0444\u044b\u0448\u044a\u0445\u044c\u044d) \u00fcr\u00fcnlerini, yani arpa, bu\u011fday, akdar\u0131 ve m\u0131s\u0131r gibi \u00fcrettiklerini, ak\u0131l ve bilgi s\u00fczgecinden ge\u00e7irerek, daha uygun olanlar\u0131n\u0131 ve daha be\u011fenilenlerini saptayarak, de\u011fi\u015fik besin\/g\u0131da \u00e7e\u015fitlerini kar\u015f\u0131la\u015ft\u0131rarak, i\u00e7lerinden se\u00e7me ve tercihler yaparak, ard\u0131ndan y\u00f6resel \u00e7e\u015fniler de katarak, sonunda \u00f6zg\u00fcn bir yemek ve sofra k\u00fclt\u00fcr\u00fc olu\u015fturuldu.<\/p>\n<p>Adige ulusal sofra k\u00fclt\u00fcr\u00fcn\u00fcn, g\u00fcn\u00fcm\u00fcz diyetisyen\/besinbilimci ve hekimleri taraf\u0131ndan ilgiyle kar\u015f\u0131lanan y\u00f6n\u00fc, de\u011fi\u015fik meyvelerin sofraya konulu\u015f ve t\u00fcketili\u015f bi\u00e7imidir. Adigelerin, en \u00e7ok da Shapsugh, Abzegh ve Natukuaylar\u0131n meyve bah\u00e7eleri (\u0447\u044a\u044b\u0433\u0445\u0430\u0442\u044d) \u00f6nem ta\u015f\u0131rd\u0131. Adige bilinci, bah\u00e7e ve k\u00f6y k\u0131y\u0131s\u0131 meyvelikleri d\u0131\u015f\u0131nda, orman i\u00e7i (\u043c\u044d\u0437-\u0447\u044a\u044b\u0433\u0445\u0430\u0442\u044d) meyveliklerini olu\u015fturma d\u00fczeyine eri\u015fmi\u015fi. Adigeler yabani elma ve armut a\u011fa\u00e7lar\u0131n\u0131 de\u011fi\u015fik ve \u00fcst kalite kalemler kullanarak a\u015f\u0131l\u0131yor, birinin g\u00fcc\u00fcne \u00f6b\u00fcr\u00fcn\u00fcn lezzetini\/kalitesini ekliyor, kaliteli elma ve armut t\u00fcrleri elde etmeyi ba\u015far\u0131yorlard\u0131. Bu t\u00fcrler aras\u0131nda so\u011fuktan ve kardan zarar g\u00f6rmeyen, me\u00e7ezen (\u043c\u044d\u0447\u044d\u0437\u044d\u043d) adl\u0131 ge\u00e7 elma cinsi, ayr\u0131ca Nisan ya da May\u0131s ay\u0131nda olgunla\u015fan iri cins k\u0131\u015f armutlar\u0131 da yer al\u0131yordu. Adige meyve bah\u00e7eleri, yaz k\u0131\u015f sofraya meyve koymaya olanak sa\u011fl\u0131yordu.<\/p>\n<p>En ilgin\u00e7 olan olgulardan biri de, 50 y\u0131l \u00f6ncesine de\u011fin, d\u00fcnya t\u0131p istatistiklerine g\u00f6re, \u201cade hastal\u0131\u011f\u0131\u201d (\u0430\u0434\u044d \u0443\u0437\/kanser), yani ur hastal\u0131\u011f\u0131n\u0131n, d\u00fcnya halklar\u0131 aras\u0131nda, en d\u00fc\u015f\u00fck oranda g\u00f6r\u00fcld\u00fc\u011f\u00fc toplulu\u011fun Adigeler oldu\u011funun saptanm\u0131\u015f olmas\u0131yd\u0131. Rostov-na-Donu kentindeki Onkoloji (Urbilim\/kanserbilim) Merkezi, durumu ilgin\u00e7 bulup Adige \u00d6zerk Oblast\u0131\u2019nda (\u015fimdi Adige Cumhuriyeti) geni\u015f bir inceleme ve ara\u015ft\u0131rmada bulunmu\u015ftu.<\/p>\n<p>Biliminsanlar\u0131n\u0131n saptamalar\u0131na g\u00f6re, o d\u00f6nemin Adige genetik yap\u0131s\u0131, o korkun\u00e7 hastal\u0131\u011fa\/ura\/kansere kar\u015f\u0131 koyacak genetik \u00f6zelliklere sahipti. Biliminsanlar\u0131 bu farkl\u0131, bu ekstra \u00f6zelli\u011fi, eski Adigelerin binlerce y\u0131ll\u0131k bir s\u00fcre\u00e7 i\u00e7inde olu\u015fturmu\u015f olduklar\u0131 yemek yeme gelene\u011fine\/k\u00fclt\u00fcr\u00fcne ba\u011flam\u0131\u015flard\u0131. Biliminsanlar\u0131n\u0131n alt\u0131n\u0131 \u00e7izdikleri saptamalar aras\u0131nda, t\u00fcm y\u0131l boyunca ya\u015f meyvelerin t\u00fcketilmekte oldu\u011fu, yemek aralar\u0131nda bol ve s\u0131k s\u0131k meyve yendi\u011fi, \u00e7ocukluktan ve ana s\u00fct\u00fcnden ba\u015flanarak ac\u0131 biberin (\u0449\u044b\u0431\u0436\u044c\u044b\u0439 \u0441\u0442\u044b\u0440) t\u00fcketildi\u011fi gibi bulgular yer alm\u0131\u015ft\u0131.<\/p>\n<p>Bu arada Adigeler aras\u0131nda bamba\u015fka ve de\u011fi\u015fik bir sofra gelene\u011finin\/k\u00fclt\u00fcr\u00fcn\u00fcn y\u00fcr\u00fcrl\u00fckte olmu\u015f oldu\u011funu belirtmek de gerekir. Bir Adige sofras\u0131na (1\u0430\u043d\u044d) tek bir yemek \u00e7e\u015fidi konurdu. Bu i\u015fin bir y\u00f6n\u00fcyd\u00fc. \u0130kinci y\u00f6n ise, yemek de\u011fi\u015ftirilecek oldu\u011funda sofran\u0131n da de\u011fi\u015ftirilmekte oldu\u011fuydu. Bundan \u00e7\u0131kar\u0131lmas\u0131 gereken \u015fey, birinin bir \u00f6nceki yeme\u011fi isteyemeyece\u011fi ve gelene\u011fi bozamayaca\u011f\u0131 ger\u00e7e\u011fi idi. Sofradaki yenmemi\u015f yemek sofra ile birlikte geri g\u00f6t\u00fcr\u00fcl\u00fcr, ikinci bir yemek ba\u015fka bir sofra \u00fczerinde getirilirdi. Bu t\u00fcr bir sofra usul\u00fc\/gelene\u011fi y\u00fczlerce y\u0131ll\u0131k ge\u00e7mi\u015fi olan bir s\u00fcrecin, bir birikim ve deneyimin \u00fcr\u00fcn\u00fcyd\u00fc. Birbirine uygun olmayan yemekleri geri \u00e7evirmek de uygun say\u0131lmaz ve geri g\u00f6t\u00fcr\u00fclmesinin s\u00f6ylenmesi uygunsuzluk olurdu.<\/p>\n<p>Bug\u00fcnk\u00fc sofralara konan, kural ve gelenek g\u00f6zetmeyen de\u011fi\u015fik yemekler, istenseler bile, asla Adige sofralar\u0131nda yer alamazlard\u0131. Yemekten al\u0131p almamak, yani yemekten yiyip yememek ki\u015finin kendine kalm\u0131\u015ft\u0131, ancak sofra ve yemek geli\u015f s\u0131ras\u0131 evin han\u0131m\u0131na ait olan bir yetki, bir g\u00f6rev idi.<\/p>\n<p>Adigelerin yemek yeme k\u00fclt\u00fcr\u00fcnde bulunan ana \u00f6zellik ve kibarca tutum, ne denli yemek getirilmi\u015f, g\u00f6t\u00fcr\u00fclm\u00fc\u015f olursa olsun, hepsinden birer lokma olsun al\u0131p \u201cte\u015fekk\u00fcr ederim, a\u00e7l\u0131\u011f\u0131m\u0131 giderdim\u201d (\u201c\u0443\u044f\u0442\u044d\u043f\u0441\u043c\u044d, \u043c\u044d\u043b\u044d\u043a1\u0430\u043b1\u044d\u0440 \u0437\u0433\u044a\u044d\u0443\u043f\u044d\u0431\u0436\u044c\u0430\u0433\u044a\u044d\u0431\u0430\u201d) diyerek sofradan kalkmak olurdu.<\/p>\n<p>T\u0131ka basa doymu\u015f olarak sofradan kalkmak Adige gelene\u011fine ters d\u00fc\u015fen\/ay\u0131p say\u0131lan bir davran\u0131\u015ft\u0131r.<\/p>\n<p>\u015eimdi ba\u015fka bir \u00f6zelli\u011fe de de\u011finelim. Adige ailesi i\u00e7inde uygulanan sofra gelene\u011fi de farkl\u0131yd\u0131, aile i\u00e7inde birlikte yemek yiyecek durumda olanlar gruplara b\u00f6l\u00fcn\u00fcyorlard\u0131. B\u00f6l\u00fcnme erkek ve kad\u0131n olarak ayr\u0131lm\u0131yordu. Baba ile o\u011flun, a\u011fabey ile k\u00fc\u00e7\u00fc\u011f\u00fcn\u00fcn, amca ile \u00e7ocu\u011fun, kaynana ile gelinin, ya\u015fl\u0131 nine ile gen\u00e7 k\u0131z\u0131n ve benzerlerinin ayn\u0131 sofrada yemek yemeleri gelene\u011fe ayk\u0131r\u0131 idi. Sonu\u00e7 olarak bir aile i\u00e7in tek bir sofra kurmak, Adige gelene\u011fine ayk\u0131r\u0131 d\u00fc\u015f\u00fcyor, birden \u00e7ok sofra kurmak gerekiyordu. Adige sofras\u0131 da bu yemek yeme usul\u00fcne g\u00f6re d\u00fczenlenmi\u015fti. Bu bak\u0131mdan herkesin uydu\u011fu ulusal kurallar vard\u0131:Erkek, i\u015fi nedeniyle, yemek vakti bulundu\u011fu yerdeki ailenin tuz ve ka\u00e7ama\u011f\u0131 (\u0449\u044b\u0433\u044a\u0443-\u043f1\u0430\u0441\u0442\u044d) ile \u00f6\u011f\u00fcn\u00fcn\u00fc kar\u015f\u0131lard\u0131. Ancak b\u00f6yle bir ama\u00e7la fazladan bir yemek de haz\u0131rlanmazd\u0131. Adige kad\u0131n\u0131 ka\u00e7amak (\u043f1\u0430\u0441\u0442\u044d) suyunu kaynat\u0131p ka\u00e7amak ununu d\u00f6kmeye ba\u015flad\u0131\u011f\u0131nda, Tanr\u0131\u2019ya (Tha\u2019ya) yalvar\u0131rd\u0131: \u201cYa Rabbi, bu nimette pay\u0131 olan\u0131 tez elden g\u00f6nder, hay\u0131rl\u0131 bir yemek olsun, nimete g\u00fc\u00e7\/\u015fifa kat!\u201d diyerek.<\/p>\n<p>Her evde, her evin han\u0131m\u0131 (\u0431\u044b\u0441\u044b\u043c\u0433\u0443\u0430\u0449\u044d), sofraya buyuracak ki\u015filerin hepsini i\u00e7ten kar\u015f\u0131lard\u0131. Bu konuda farkl\u0131 bir gelenek de vard\u0131. Adige ya\u015fl\u0131lar\u0131, gen\u00e7leri \u015f\u00f6yle diyerek e\u011fitirlerdi: \u201c\u00c7\u00fcveninde koyacak unun yoksa sofra kurmaya kalk\u0131\u015fma. Gelen konu\u011fa yedirecek yiyece\u011finin olmamas\u0131 g\u00fcnaht\u0131r!\u201d Adige evine kim gelirse gelsin, ne gibi bir i\u015fi olursa olsun, konu\u011fa \u00f6nce sofra g\u00f6t\u00fcr\u00fcl\u00fcr, ard\u0131ndan ne istedi\u011fi sorulur, elden geliyorsa iste\u011fi yerine getirilirdi.<\/p>\n<p>Yemek vakti gelen konu\u011fun k\u0131smetiyle geldi\u011fi varsay\u0131l\u0131yor, alelacele, \u201ckonuk evine (\u0445\u044c\u0430\u043a1\u044d\u0449) vakti geldi\u011finde yemek g\u00f6t\u00fcr\u00fcl\u00fcr\u201d denmezdi. Gelenek b\u00f6yleydi ve herkes taraf\u0131ndan uyulurdu. Ev sahibi (b\u0131s\u0131m) evde olmad\u0131\u011f\u0131nda, yerine biri g\u00f6revlendirilir, yemek vakti geldi\u011finde, konu\u011fun elini y\u0131kamas\u0131 i\u00e7in konuk evine ibrik ve le\u011fen g\u00f6t\u00fcr\u00fcrd\u00fc.
