Sofra mutfakta evin han\u0131m\u0131 taraf\u0131ndan haz\u0131rlan\u0131r ve gen\u00e7ler taraf\u0131ndan yemek yenecek yere g\u00f6t\u00fcr\u00fcl\u00fcrd\u00fc.<\/p>\n<p>Ailede k\u00f6\u015fesine \u00e7ekilmi\u015f ya\u015fl\u0131 biri varsa, ilk sofra ona, b\u00fcy\u00fck eve (\u0443\u043d\u044d\u0448\u0445\u043e) g\u00f6t\u00fcr\u00fcl\u00fcrd\u00fc.<\/p>\n<p>\u0130kinci sofra, konukevine (ha\u00e7\u2019e\u015f\/\u0445\u044c\u0430\u043a1\u044d\u0449) g\u00f6t\u00fcr\u00fcl\u00fcrd\u00fc. Orada evin ge\u00e7imini y\u00fcklenmi\u015f olan karde\u015flerin en b\u00fcy\u00fc\u011f\u00fc bulunur, yemek vaktinde konukevine gelen biri olursa, \u201cBismillah\u201d diyerek onunla birlikte sofraya otururdu. Konukevi sofras\u0131na ayakta olarak bir gen\u00e7 hizmet ederdi.<\/p>\n<p>Ard\u0131ndan evde ya\u015fl\u0131 bir k\u0131z, kom\u015fu ya da konuk bir k\u0131z varsa, \u00fc\u00e7\u00fcnc\u00fc sofra oraya g\u00f6t\u00fcr\u00fcl\u00fcrd\u00fc. Ulus, en iyi hizmeti konuk sofras\u0131 i\u00e7in yapard\u0131. Bell kar\u015f\u0131la\u015fm\u0131\u015f oldu\u011fu ilgin\u00e7 olaylar\u0131 an\u0131lar\u0131nda anlat\u0131yor (1). S\u00f6zgeli\u015fi ayn\u0131 g\u00fcn iki ayr\u0131 aileye konuk olmas\u0131 gerekmi\u015fti. \u0130lk aile kendisine 45, ikinci aile de 47 de\u011fi\u015fik yemek sunmu\u015ftu. \u201dBu yedi\u011fim yemeklerin neler oldu\u011funu ve ne denli lezzetli olduklar\u0131n\u0131 anlatabilecek durumda de\u011filim!\u201d diye yaz\u0131yor an\u0131lar\u0131nda. De\u011fi\u015fik yemek say\u0131s\u0131n\u0131 saptamada yanl\u0131\u015fl\u0131k yapmamak i\u00e7in, refakat\u00e7isi olan gen\u00e7ten yemekleri saymas\u0131n\u0131 istemi\u015fti.<\/p>\n<p>Bu anlat\u0131lanlar bize, sadece konuk a\u011f\u0131rlamakla yetinilmedi\u011fini g\u00f6steriyor. Eskiden konukla ayn\u0131 sofraya oturacak olanlar stat\u00fc (\u0442\u0435\u0442\u044b\u0433\u044a\u043e), ya\u015f durumu, \u00fclke ya da k\u00f6y konu\u011fu olmas\u0131 gibi durumlara, konu\u011fun refakat\u00e7isine ve nereden gelmi\u015f oldu\u011funa ba\u011fl\u0131 olarak belirlenirdi. Kim gelmi\u015fse, hepsini buyur edip ayn\u0131 sofrada a\u011f\u0131rlamak, konuk sofras\u0131 gelene\u011fine uygun d\u00fc\u015fmezdi.<\/p>\n<p>Konuk bey (p\u015f\u0131) soyundan gelme ise, onun i\u00e7in tek ki\u015filik bir sofra haz\u0131rlan\u0131r, di\u011ferleri ona ayakta hizmet ederlerdi, ancak bu hizmet edenlerin de soylu\/l\u2019ekotle\u015f (\u043b1\u044d\u043a\u044a\u043e\u043b\u044a\u044d\u0448-\u0442\u044b\u0436\u044c\u044b\u043d\u044b\u0433\u044a\u043e) olmalar\u0131 gerekirdi. Bey ile yemek yiyecek olan ki\u015fi, bey taraf\u0131ndan se\u00e7ilirdi\/belirlenirdi.<\/p>\n<p>Konu\u011fun sosyal stat\u00fcs\u00fcne ve ya\u015f\u0131na uygun d\u00fc\u015fen ki\u015filer, o konu\u011fun arkada\u015flar\u0131 aras\u0131nda bulunuyorsa, b\u00f6yleleri konukla birlikte yemek yiyebilirlerdi.
